Japanese Kitchen Lab. Gomen So Good, We're Sorry • Gomen Story • 01. 名前 (THE NAME) GO(han) + MEN = GOMEN GOMEN is a formula. "Gohan" means rice, and "Men" means noodle. Brought together, it represents the two essential pillars of Japanese soul food. Coincidentally, "Gomen" also translates to "I'm sorry" in Japanese. 02. 研究所 (THE LAB) Where Mastery Meets Science. Great food is an exact science. Backed by over 15 years of culinary mastery in traditional Tendon and Ramen, our Head Chef built this Kitchen Lab with one goal: to engineer the ultimate bowl. From the thermodynamics of our meats to the pH of our sushi rice, every element is calculated. We don't guess—we measure. 03. 謝罪 (THE APOLOGY) GOMEN & AMEN "Gomen" is our humble apology. We are sorry for our endless obsession to perfect every single grain of rice and drop of sauce. We are always learning, always striving to serve you a better bowl. One Bowl, Cut to Order


The kaisen bowl is where our knife work shows. Salmon, tuna, hamachi, scallop, and sushi shrimp are sliced only after your order lands, then arranged over rice with ikura, tobiko, and folded tamago. A dill tempura goes on top for crunch, while carrot râpées and seasonal kale finish the plate. For a bigger occasion, the Premium bowl adds Hokkaido uni and botan ebi. Nothing is portioned in advance, which is the whole point — the temperature, the texture, and the timing all reach you exactly where they should be.
